Raw Taco Lettuce Wraps
Hey Queens, these raw tacos are so easy and good!
First marinate your mushrooms
2 cups of chopped mushrooms
3 tablespoons of coconut aminos
1 tablespoon of Agave
2 teaspoons lime juice
1 teaspoon cold press olive oil
Place mushrooms and marinade ingredients in a ziplock bag and shake to coat the mushrooms.
And then put the ziplock bag in the refrigerator so the mushrooms can marinate for 2-3 hours
Then right after that while the mushrooms are marinating make your walnut mixture!
Walnut Filling
2 cups of Walnuts , soaked in a mason jar or a glass bowl for 2-3 hours
After they are finished soaking, drain the water off and by this time the mushrooms should be marinated.
Add to your food processor the marinated mushrooms, the soaked walnuts, 1 teaspoon of sage, 1 teaspoon of coriander, 1 teaspoon of basil, 1/4 teaspoon of cayenne pepper, 1/2 cup bell pepper, and 1/4 cup of red onion, one handful of fresh cilantro, and salt and pepper to taste.
Pulse all these ingredients together but leave it kinda chunky and don't overdue it because you don't want it to be mushy or soupy.
Assembly
Take your lettuce leaves and place the mixture in them and top them with avocado slices, pico de gallo, salsa, cherry tomatoes, or whichever way you like them but please no animal products like cheese.
