Vegan Beef & Broccoli Quiche



(This makes 2 Pies)


1 Pack of Abbots Ground Vegan Beef (or any Vegan Beef of choice)

1 1/2 cups shredded Violife Vegan cheddar cheese

1 can Rotel tomatoes, drained

1 carton of Just Eggs (Vegan Eggs)

1/4 cup Ranch dressing

1 cup of Broccoli

1/2 cup of onion

Season to taste (Sea salt, black pepper, garlic, etc)

Parchment Paper









2 9-inch unbaked deep dish pie shell

Preheat oven to 350.

Let pie shells cook in oven uncovered for about 10 -15 mins first (I do this so the pie crust will be done and not gummy).


In the meantime, in a large skillet, add some oil and sautee onions until translucent and add Vegan Beef, Rotel, & Broccoli and add your favorite seasonings to taste, (about 10 -15 minutes )


Then pour the beef mixture in a bowl and stir in the Carton of eggs, Ranch Dressing, & Cheese and stir really well to combine the seasonings and the ingredients.


Then divide and pour the mixture in 2 pie shells and cover them in oven for 30 mins.


After 30 minutes, take off covering or aluminum foil, (I used Parchment Paper) and let them cook uncovered for another 30 minutes and take them out and let them cool & rest about 10 minutes before serving!
